Eggplant Parmesan

Yes you read correctly, that says eggplant Parmesan not chicken.  I've never been a big meat lover, in fact it sometimes grosses me out and I can't eat all my chicken. One time I threw up a whole burger because of something David said. I have officially grossed myself out of ever eating eggs again. I will keep that little fact to myself. True or not true it's gross so your welcome. 

So not matter how grossed out I was by meat, I thought being a vegeterian was basically impossible. I have a couple friend's at school who are, and they inspired me. So for the past 10 days I have gone without meat. Even out in grace when staying on a cattle farm I didn't give in. That was the wrong week to give up meat, those farmers are tough! 

Anyways lets get to the point of the eggplant. I had been running out of ideas as to what to eat. Bean and cheese burritos were happening way too often, even though they are my all time favorite. So David being the kind and wonderful husband he is, saw my struggle and made a veggie dish! awww! It's so good I thought it tasted just like chicken, but that's coming from someone who thinks a veggie burger tastes just like a regular burger.

So I'm trying out being a vegetarian, I mostly wanted to try it for the health reasons, and to see if I had the self control to do it. I don't think I will be able to give up salmon, or certain burgers in new york. We will see how it goes, so far I like it.



Ingredients:
 1 garlic clove, minced
1 small eggplant, peeled and cut into 1/4 inch slices
1 tablespoon minced fresh basil
1 medium tomato, thinly sliced
1/2 cup shredded mozzarella cheese 
Thing spaghetti and sauce of choice

Directions:
 1. Slice Eggplant to a 1/4". 
 2. Put water, garlic, salt and pepper, and a little butter in a frying pan. 
 3. Brown eggplant. 
4. Move eggplant to a baking sheet and sprinkle with mozzarella cheese.
5. Top with tomato slice and another sprinkle of cheese.
6. Bake on high broil until cheese is melted.
7. Put eggplant on top of spaghetti and enjoy!

  1. Well, Good luck with that. . . whole . . . veggie thing. Personally I'm a carnivore. A discriminating meat eater though. I won't eat just anything. Time and experience has taught me the good things are worth waiting for. So as you go forward in life you might just want to keep your options open.
